This is a South of Vietnam specific soup, It called "Canh chua ca" in
Vietnamese language. Vietnamese take it with cooked rice, braised
pork...
I. Raw materials:
- 1 kg White bass
- 4 tomatoes
- Beansprouts, corianders (rau thơm, ngò gai, rau om)
- 1 sprit of mint , 10 okrases (fingers - đau bap)
- 1 chilli, 2 small spring onion
- Salt, seasoning powder, suger
- vegetable oil, onion, garlic
II. Method:
- White bass
: make it clearly, cut into pieces
- Sprit of mint and okras cut in 0.5 cm portions
- Beansprouts clean with water
- Tomato cut in 8 parts like as section of an orange
- Pour 2 litters water in pot, put salt, seasoning powder, suger
in water pot. Boil.
- Put Beansprouts, sprit of mint , okrases and tomato in water pot. Continue to boil
- Roast onion, garlic
with some oil scoop, put White bass
in this oil mixturre for reject fishy smell, then put all of them in mixture pot. Then heat all of them with small fire (fish will be not broken)
- Take it out, put chopped corianders (rau thơm, ngò gai, rau om) in
Now, pls to take it with cooked rice, braised
